The 1800 watt countertop uses what Breville calls Element IQ where the various heating elements work independently based upon what type of food is being prepared.  The oven has an easily read backlit menu with nine functions-toast, bagel, bake, roast, broil, pizza, cookies, reheat and warm-to control the heating elements and bake time.  Should you want to adjust the suggested cooking time or temperature that is easily done with the twist of a knob.

The toast option allows you to prepare up to six slices of bread from lightly toasted to dark.  Using the preset knobs the heating elements and time will automatically calculate settings for perfect toast every time.  If you want to toast bagels or thick slices of bread the bagel setting will give your baked items crunchy outsides with warm centers.

The baking, roasting and broiling features are similar to those in built-in ovens.  With a .8 cubic foot capacity the Breville Smart Oven is large enough to handle a full-sized chicken. 

When baking a pizza you can select from several options to ensure the proper bake time such as diameter of the pizza (up to 13 inches), if it is frozen or fresh, and if you would like to use the convection oven.  A word of warning: many food manufacturers do not print cooking instructions for convection ovens so you will need to reduce the cooking time accordingly.
