Like most brassica or cole crops, kohl rabi grow best in cool weather. Little growth occurs above about 75F and they tend to become woody and fibrous. Purplish leaves and globes with mild turnip-cabbage flavor. Leaves are eaten like kale and white-fleshed bulbs are eaten like broccoli. According to the USDA nutritional data, they are a good source of vitamin C and potassium and are low in both sodium and calories. This close relative of the cabbage was bred over centuries to develop a flattened meristem. Sometimes referred to as German turnips. The flavour is like a very mild cabbage and the texture is crisp and crunchy, a bit like that of a pear. Harvest the attractive purple kohlrabis at 6cm (2½") in diameter for the finest texture. Direct sow in early spring for a summer harvest, and again in August to harvest in the cool weather of the fall and winter.
